This naturally processed lot comes from Chito in Ethiopia’s SNNP region, produced by Mesfin Girma. At the station, Mesfin oversees a meticulous 120-hour dry fermentation in polypropylene bags, before the coffee is milled at a facility owned by Keffa’s longtime friend, Biru Bekele.
